Fall is the perfect time for warm, cozy, and healthy meals at home. Whether you're harvesting your own fall veggies or you're shopping at the farmer's market this season, these three super easy fall harvest recipes are packed with wholesome ingredients and bursting with the comforting flavors of the season. 🍂

Baked Feta & Butternut Squash Pasta

Nothing beats creamy feta cheese, savory spices, and tender butternut squash made into a delicious pasta dinner! We love this dish because it's delicious (the kids even ask for seconds 😊), healthy, and quick & easy to make. Plus, it's a great way to mix in some hidden vegetables for your picky-eaters. Butternut squash is a great source of potassium, fiber, and vitamins C & A. 

Ingredients:

  • 5 cups cubed butternut squash
  • 1/2 cup olive oil
  • 1 (8 oz) block of feta cheese
  • 1 lb rotini pasta
  • 10 fresh sage leaves
  • 3 cloves garlic
  • Salt & pepper to taste

How to Make:

  1. Preheat the oven to 400°. Then, toss the butternut squash cubes in olive oil, salt, and pepper and place on a baking dish.
  2. Place the block of feta in the center and drizzle with more olive oil and pepper.
  3. Bake for 30 minutes, gently tossing the squash cubes around halfway - making sure not to disturb the feta!
  4. Boil the pasta and be sure to save 2 cups of pasta water.
  5. Once the feta and butternut squash is done baking, add minced garlic and minced sage. Then, use a fork to mix everything together, breaking up the feta.
  6. Add the pasta and one cup of pasta water and mix. If the pasta appears dry, continue to add the remaining pasta water until creamy.
  7. Season with salt and pepper and serve!

 

Parmesan Herb Roasted Acorn Squash

This delicious recipe is perfect as a side dish to a warm, fall meal. It's savory, cheesy, and can easily be saved as leftovers. Plus, acorn squash is packed with antioxidants that boost immunity and help prevent illness during flu-season! 

Ingredients:

  • 2 acorn squash
  • 1/4 cup olive oil
  • 1 cup finely grated parmesan cheese
  • 1 tsp garlic powder
  • Basil, oregano, & thyme to taste
  • Salt & pepper to taste

How to Make:

  1. Preheat oven to 425°. Then, remove the top and bottom of the squash and slice in half. Remove seeds and slice each half into 1-inch thick slices.
  2. Toss squash in olive oil, parmesan, garlic, salt, pepper, basil, thyme, and oregano.
  3. Place the squash slices on a baking sheet and press leftover parmesan mixture on top of slices.
  4. Bake for 20-25 minutes, until soft and slightly golden.
  5. Serve and enjoy!

 

Creamy Simple Pumpkin Soup

This soup is perfect for chilly fall days spent inside cozied up on the couch. This simple-ingredient recipe combines the fresh flavor of pumpkin with a delicious creamy soup base. It's sure to warm you up and goes great with a slice of homemade sourdough bread! 😉

Ingredients:

  • 1 pumpkin (4-5 lbs)
  • 1 onion
  • 2 cloves of garlic
  • 1 cup water
  • Salt & Pepper to taste
  • 3 cups cream
  • 4 cups vegetable broth

How to Make:

  1. Slice the pumpkin into 3 cm slices. Cut the skin off and scrape the seeds out.
  2. Place pumpkin, onion, garlic, broth and water in a pot and bring to a boil. Then, reduce heat and let simmer until pumpkin is tender (about 10 minutes).
  3. Remove from heat and use a stick blender until smooth.
  4. Season to taste with salt and pepper, and stir in the cream.
  5. Once ladled into bowls, sprinkle with pepper and drizzle with cream!
